Do we work with local suppliers in a way that avoids unnecessary transport and packaging? Perhaps we use technologically advanced digital tools to facilitate connections, quantity and timing of deliveries and disposal of surplus, waste, etc.?

Do we provide our guests with locally sourced food from short supply chains? Is the origin of the food traceable, verifiable, perhaps even accessible to experience, to see the production of the local food we offer to guests?
